Researchers have found that a vegetarian diet appear to be associated with lower cancer incidence.
In an article in Healthy Options News Digest, Dr. Jeffrey Bland states that "researchers believe that vegetarian diets might be cancer-preventive because the fats in plants are low in arachidonic acid, a substance essential to the growth of certain cancer cells and their resistance to the immune system."
Eating more vegetables of the cruciferous family (broccoli, Brussels sprouts, cabbage and cauliflower) is associated with lower incidence of cancer.
Phytochemicals in these vegetables support liver enzymes in detoxifying foreign substances that may be cancer-causing.
Tofu and soymilk, which contains isoflavons, may influence estrogen and testosterone metabolism and may help reduce the risk of hormone related cancers. There is a strong corrrelation between intake of soy products and the lower incidence of breast and prostrate cancer.
